At sea level the boiling point of water is 212 degrees F. A pressure cooker raises the pressure so the water boils at a higher temperature. A typical pressure cooker will raise the boiling point of water to 250 degrees F at sea level. The higher temperature cooks foods faster reducing time in the kitchen, which means more time for yourself.
Pressure cooker canning is the only method recomended by the U.S.D.A. for canning low acid foods such as meat, fish, fruits and vegetables.
